What’s great about this recipe is that it’s easy to make and uses just a few ingredients. If you like working with seasonal ingredients and want to use edible flowers, homemade violet sugar is a lovely spring idea.

What is violet sugar?

Violet sugar is flavoured sugar made with fresh, edible violets. The blossoms pass on their delicate aroma and natural colour to the sugar. The result is a special ingredient you can use to naturally enhance desserts and drinks.

Depending on how many blossoms you use and how long you dry it, the flavour can be more intense or more subtle. Violet sugar is also especially lovely as a decorative touch on cakes, biscuits, cupcakes, or delicate pastries.

Why you should try violet sugar

Violet sugar is ideal if you want to use spring blossoms creatively in the kitchen. It looks pretty, smells delicate, and is versatile. It’s also a thoughtful DIY idea that’s perfect for gifting.

Violet sugar goes especially well with:

  • Quark creams
  • Yoghurt and desserts
  • Cakes and muffins
  • Tea and lemonades
  • Palatschinken and Kaiserschmarrn
  • Delicate shortcrust pastries

Step-by-step instructions for homemade violet sugar:

The magical world of violets

Violets are known not only for their delicate blossoms, but also for their subtle aroma. You can capture this aroma easily by combining sugar and dried violet blossoms. Here’s how, step by step:

Ingredients:

  • 50 g sugar
  • 10 g fresh violet blossoms

1. Prepare the violets: The violets should be dry and not washed. Check the blossoms carefully and remove the green parts. Only the petals should be used. The green parts can be used later for violet syrup if you add more blossoms.

2. Mix sugar and violets: In a blender or food processor, combine the sugar and violet blossoms. Make sure the blossoms are finely ground to release the aroma as well as possible.

3. Let it dry: Spread the mixture on a baking tray and let it air-dry. This can take a few hours up to a day, depending on humidity. A quicker option is to bake the mixture at 100°C in the oven (top/bottom heat) for about 2 hours, until completely dry.

4. Store: Once the violet sugar is dry, transfer it to airtight jars or containers. Your homemade violet sugar is now ready to use in your kitchen.

Culinary uses for violet sugar:

  • Baking: Give your cakes, biscuits, or muffins a heavenly touch by mixing violet sugar into the batter.
  • Drinks: Sweeten your tea or coffee with a pinch of violet sugar for a hint of spring in your cup.
  • Decoration: Sprinkle desserts like pudding or ice cream with a little violet sugar for an elegant, aromatic finish.

Tips for preparation

To make your violet sugar especially beautiful and long-lasting, use only unsprayed, truly edible violets. Blossoms from your own garden are ideal, as long as you’re sure they haven’t been treated.

Also make sure the sugar is really well dried before you jar it up. That way it stays loose and stores better. If you like, you can briefly mix it again after drying or gently loosen it up.

How to use violet sugar

Violet sugar is much more than just a pretty spring recipe. You can use it in many sweet dishes, and it adds a special touch.

For example, you can use it:

  • as a topping for cakes and muffins
  • to sweeten tea
  • for homemade lemonades
  • over fresh strawberries or fruit salad
  • in creams and frostings
  • as a lovely homemade gift

Violet sugar as a gift idea

If you like giving homemade gifts, violet sugar is a wonderful idea. Poured into a small jar and decorated with a pretty ribbon, it becomes a thoughtful little present for spring, Easter, Mother’s Day, or simply as a small gesture.

The sugar looks especially lovely in a decorative jar with a matching label. That turns a simple recipe into a very personal gift.
